These have been popping up a lot lately in my Instagram feeds, and I thought I’d better hop on this waffle train! I did not create these recipes, I am re-posting them with permission from two awesome and innovative Bright Line Eaters.

Left: Plant Based, Right: With Eggs

Here are two recipes for sweet potato waffles. One is plant-based and one contains eggs. I like having both in my repertoire. They are both delicious. Whichever recipe you choose, each serving contains:

  • 1 Grain Serving
  • 1 Protein Serving
  • 1 Fruit Serving

Sweet Potato Waffles (Plant Based)

  • Servings: Makes 1 Serving

Ingredients

Grain Serving

  • 1 small sweet potato (4 oz cooked sweet potato)

Protein Serving

  • 0.5 oz (1 tablespoon) ground flax seeds (1/4 protein)

  • 2 oz plant-based yogurt (1/4 protein)

  • 1 oz nuts/seeds for topping (1/2 protein)

Fruit Serving

  • 6 oz breakfast fruit

Maintenance Modifications

  • Grain Additions: Increase grain to 6 oz cooked sweet potato.
  • Protein Additions: Top with an extra serving of nuts, nut butter, or yogurt.

Directions

  1. Preheat your waffle iron.
  2. Cook the sweet potato in the oven or microwave until soft.
  3. While the sweet potato is cooking, prepare the flax mixture (also known as a “flax egg”). Pour 1/4 cup of boiling water over the ground flax seeds and whisk with a fork. Allow it to sit for at least 5 minutes to thicken.
  4. Remove the skin and weigh out your sweet potato.
  5. Stir and mash the sweet potato into the flax mixture. It will be quite sticky.
  6. Pour the mixture into the waffle iron & cook on medium for 8-10 mins. Don’t lift the lid while it’s cooking or this will pull the waffle apart. It needs to be fully cooked before the lid is lifted. You can wait longer, (up to about 15 mins on a lower setting) and it will be fine. If you are in doubt, they are better to be left a little longer, not shorter!
  7. When your waffle is done, remove & serve with desired toppings.

Sweet Potato Waffles (With Eggs)

  • Servings: Makes 1 Serving

Ingredients

Grain Serving

  • 1 small sweet potato (4 oz cooked sweet potato)

Protein Serving

  • 2 eggs

Fruit Serving

  • 6 oz breakfast fruit

  • Grain Additions: Increase grain to 6 oz cooked sweet potato.

Directions

  1. Mash sweet potato in a small bowl with a fork.

  2. In a separate bowl, whip the egg.

  3. Mix the sweet potato and egg together and stir well until creamy. Alternatively, you could blend this mixture in a small blender cup.

  4. Add flavorings (try cinnamon, vanilla, pumpkin pie spice, etc)

  5. Scoop into hot waffle maker and cook for 8-9 minutes. Don’t lift the lid while it’s cooking or this will pull the waffle apart. It needs to be fully cooked before the lid is lifted. You can wait longer, (up to about 15 mins on a lower setting) and it will be fine. If you are in doubt, they are better to be left a little longer, not shorter!
